Well the ancient Chinese infused oil with hemp seeds.. back then they were commonly used as grains... either ground into meal, roasted whole, or cooked into porridge or whatever.. the extract contained essential oils and proteins but it wasn't used for cooking necessarily until later I think but I believe they were the first.. if not, for sure the ancient Indians. They knew what was up.

As it made it's way to India, it was received with open arms... Ancient Indians were quick to recognize its' wide range of benefits from hemp-fiber materials to the nutritional qualities of cannabis. They embraced it as an aid in religious rituals as well, utilizing the psychoactive properties in the buds. They actually regarded it as a gift from the gods, hailing it as a magical herb that "lowered fevers, fostered sleep, relieved dysentery, stimulated appetite, prolonged life, quickened the mind, and improved judgment" http://real-gaia.angelfire.com/charas.html
Ghee (clarified butter) was as common in Indian culture then as it is today and was often infused with cannabis to use in a wide variety of ancient Indian recipes.

So knowing cannabis' nutritional qualities carry over when heated in oil or butter, they decided to see if the pharmacological and psychoactive qualities could be harnessed the same way... and they were absolutely right. =)

I always figured it was more of a "You got weed in my butter!" "You got butter all over my weed!" Kinda situation. Either that or a bizarre highway accident involving a butter truck and a weed truck.

I figure you just heat butter in a pan, add weed, let it simmer for a little bit strain out the remaining weed and then chill the butter. But I could be way wrong so no promises,

Its pretty much basic chemistry. from the chemical composition of THC you can make the inference that its fat and not water soluble.
