you don't know what you look like, you know what the skin on your body's surface looks like. skin sheds so often you have a completely new set of skin cells about every 2-3 weeks.
to quote livescience.com:
"Skin cells live about two or three weeks. Colon cells have it rough: They die off after about four days. Sperm cells have a life span of only about three days, while brain cells typically last an entire lifetime"
also, people have different skin colors mainly because their melanocytes produce different amount and kinds of melanin. you yourself are not causing the color of your skin, and you're not causing the appearance you see in the mirror, so you haven't seen yourself.

There was a time when only royals had mirrors...imagine living to your current age without ever having looked in a mirror once...trippy..
